Strawberry, fennel, & goat cheese salad
Strawberries, like other berries, are bursting with antioxidants (which keep damaging free radicals at bay!). This is a delicious, fresh salad full of raw ingredients, plus a bit of cheese.
Have you tried fennel? Its flavor is licorice-y and it’s one of my favorite veggies, especially for salads. Make this salad in the spring and early summer when the most amazing strawberries abound. The flavors in this salad are just so delicious from simple, fresh ingredients.
Per my usual eating recommendations, this recipe keeps the amount of fruits/veggies high. The small amount of cheese and oil minimizes the fat, while you’re able to still enjoy some for tons of flavor:
Ingredients
2 cups strawberries, hulls removed and sliced
1 large fennel bulb, finely sliced
1 cucumber, finely sliced
1/2 small goat cheese log, cut into small pieces
1 tsp olive oil
2 tbsp white wine vinegar
2 tsp Dijon mustard
1 tsp honey
Sea salt
Black pepper
Preparation
Combine strawberries, fennel, and cucumber in a serving bowl. Dot the pieces of goat cheese over the salad. In a separate bowl, combine the olive oil, white wine vinegar, Dijon mustard, and honey. Add salt and pepper to taste. Pour the dressing over the salad and serve immediately.
