Watermelon mint salad

Summertime means refreshing, juicy watermelon!

Who else loves watermelon as much as I do?! It’s one of the best fruits for sure, when you get a really good one in the summer. Not only is cool watermelon super refreshing to eat when it’s warm out, watermelon is also quite health beneficial! High in the phytonutrient lycopene which is the red pigment that gives watermelons, tomatoes, guavas and red grapefruits their color. Lycopene helps protect your skin from the sun’s UV rays—like sunscreen from the inside out! Load up on watermelon in the summer months!

This zesty salad features crisp watermelon, refreshing cucumber, zingy lime, cooling mint, and salty feta cheese. Mmmm the combo is really great together! I don’t know about you but these are some of my all-time favorite ingredients.

Ingredients

  • ¼ watermelon

  • 1 cucumber

  • 7 oz feta cheese

  • 1 bunch fresh mint leaves

  • zest & juice of 1 lime

  • sea salt

  • black pepper

Preparation

  1. Chop the watermelon into dice-sized cubes, remove any seeds, and place in a serving bowl. Trim and peel the cucumber and slice into thin rounds. Dice the feta and tear or chop the mint leaves, reserving a few whole leaves for garnish. Add the cucumber, feta, mint, and lime zest to the serving bowl. Pour the lime juice over the fruit and sprinkle with a pinch of sea salt and black pepper to taste.

  2. Gently mix all the ingredients to combine thoroughly, then top with reserved mint leaves. Serve chilled.
