The best banana bread

The best banana bread ever—made in one bowl and it’s gluten-free!

One of my favorite treats of all time, this banana bread is fantastically delicious and also easy to make! Moist and delectable with wonderful banana flavor, there is little better than banana bread. Even non gluten-free eaters won’t know this is gluten-free. Make 2 loaves at once, it’s super easy and you’ll be glad you did! Give some to a friend or relative as a treat—they’ll love it! My top favorite way to make this is with chocolate chips and walnuts added in, the nuts give some crunchiness and the chocolate-banana flavor is just the best.

Ingredients


16 servings (2 loaves)

  • 5 or 6 very ripe bananas

  • 2/3 cup melted coconut oil (or butter)

  • 2 tsp baking soda

  • 3 cups gluten-free flour

  • 1/8 tsp salt

  • 1 1/2 cups sugar

  • 4 eggs

  • 2 tsp pure vanilla extract

  • Optional add-ons:
    2/3 cup chocolate chips & 1 cup chopped walnuts
    or
    1 cup blueberries (fresh or frozen) & 1/2 tsp cinnamon

Preparation


  1. Preheat the oven to 350° F.

  2. Use a dab of coconut oil to grease two 4x8 loaf pans (use your fingers to spread it in the pans).

  3. In a mixing bowl, mash the bananas with a fork until smooth.

  4. Stir the baking soda into the bananas.

  5. Stir the melted coconut oil into the bananas.

  6. Stir in the sugar, salt, eggs, and vanilla extract.

  7. Stir in the flour.

  8. Stir in optional add-ons (if using).

  9. Pour the batter into the greased loaf pans.

  10. Bake on the center rack for 65 to 75 minutes or until a toothpick inserted in the center comes out clean.

  11. Let cool until a little warmer than room temperature before slicing and enjoy!

  12. Store in an air-tight container.
