Peach, tomato & mozzarella salad

When summer comes, what is better than a juicy peach?!

Grab them from the market, as well as the beautiful heirloom tomatoes and basil, and get to making a summer salad masterpiece. This salad is bursting with tangy peach flavor and it’s full of antioxidants, vitamins, minerals and fiber. It will leave you looking and feeling so good.

I recently started growing basil for occasions just like this to pick leaves straight from the plant and eat them within minutes! The salad turned out beautifully, the sea salt and pepper definitely added to the flavor. I will be making this again soon.

Ingredients


  • 2 ripe peaches

  • 3 medium heirloom tomatoes

  • 1 mozzarella ball

  • 1 tbsp olive oil

  • 1 tsp Dijon mustard

  • Sea salt

  • Black pepper

  • 5 basil leaves

Preparation


  1. Halve and pit the peaches, then cut into small chunks and place into a serving bowl. Cut the tomatoes into quarters and slice the mozzarella ball into small pieces, then add to the bowl.

  2. Mix together the olive oil, Dijon mustard, sea salt, and black pepper to taste, then pour over the ingredients in the bowl. Tear and add the basil leaves and gently combine.
