Amazing vegan chocolate cake

My friend who’s an excellent baker and I created this AMAZING vegan chocolate cake recipe.

It’s sweet, rich and so very chocolate-y, while at the same time vegan and gluten-free with simple ingredients. It’s quick to mix up, too, so I wouldn’t be surprised if this becomes one of your go-to dessert recipes as it is for me!

The chocolate frosting is absolutely delicious! If you’re into cake frosting like me, I think you’ll love it. The frosting ingredients are pretty much just sugar, coconut oil and cocoa powder which means it is not bad for your body (unlike the hydrogenated oils found in most store-bought frostings!).

This time I made it I put slice strawberries on top, they looked gorgeous (definitely IG worthy)! I must say they really added to the flavor as well, eating this cake with fresh fruit is now my favorite way. Other fruits that could be yummy: cherries, blueberries, raspberries. Try it!

Cake

Ingredients


  • 1 ½ cups gluten-free flour

  • 1 cup sugar

  • ¼ cup cocoa powder

  • 1 tsp baking soda

  • ⅓ cup vegetable oil like canola or coconut oil

  • 1 tsp vanilla extract

  • 1 tsp vinegar

  • 1 cup water

Preparation


  1. Preheat oven to 350°F. Grease baking dish or cupcake pan (I like to put a little coconut oil on my fingers and rub it on the pan).

  2. In a medium bowl, stir flour, sugar, cocoa, baking soda. Add the oil, vanilla, vinegar, and water. Mix until smooth and pour into baking dish.

  3. Makes 1 loaf pan, 9” round cake or 15 cupcakes.

Loaf pan: Bake approximately 40 minutes
Round cake: Bake approximately 30 minutes
Cupcakes: Bake approximately 12 minutes

Chocolate Frosting

Ingredients


  • 2 cups powdered sugar

  • ¼ cup (½ stick) dairy/soy free margarine, or coconut oil

  • ¼ cup non-dairy milk (such as almond)

  • ¾ cup unsweetened cocoa powder

  • ½ tsp vanilla

Preparation


  1. Use an electric hand mixer to cream the powdered sugar and margarine until mixture is thick but well combined. Add milk, cocoa powder and vanilla, and mix until smooth.

*Wait until cake is cool before frosting it so that the frosting doesn’t melt!
